The Making Procedure

 

The olives at the right grades of ripe (November- December) are directly picked from the plants, manually or by mechanic shaking, stored in ventilated wood containers and immediately (within 24 hours) grinded in iron facilities, by using advanced technology procedures.

Such facilities crash the olives and separate the extra virgin oil from other components with cold processes, which respect the chemical, physical and organoleptic characteristics of the olives, thus leaving untouched all the characteristics and nutritional and biological value of an olive “juice”, completely natural.

The oil obtained is harvested in iron containers at low temperatures, in absolute absence of air and light, and at end bottled in dark glass so to preserve untouched all its precious remarks.

From the flowering of the tree to bottling, the product and the processes are constantly monitored by the company’s Agronomist.
